We sure like complicated and intresting recipes here at the Sitno Seckano dutch outpost. Hours spent pouring over recipes, cooking and stirring and buying odd ingredients. But that mostly happens on the weekend. Between the crazy cooking weekends though, we are tired and hungry and we need to eat quickly.
And our friend Nate feels the same. He is always busy, not a very experienced cook and he is trying to save money. So we came up with this recipe especially for him (inspired by a similar stew by Nigel Slater). This also marks the start of our new category of recipes: Cheap, Easy, Tasty.
The beauty of this recipe is that it is infinitely adaptable. No chorizo where you live? Then add another type of sausage, or cubed chicken breast, or some bacon. Don’t have any potatoes at hand? Then leave them out and eat the stew with crusty bread or over steamed rice. And you can make it as spicy or not as you like.

100 gr./ about 4 oz. spanish chorizo (in Holland, we prefer the Stegeman brand rather then the AH)
2 tablespoons olive oil
1-2 onions, chopped
2-3 garlic cloves, chopped
2 cans tomatoes
1 can chickpeas
3-4 large potatoes, peeled and chopped in large chunks (optional)
1/2 teaspoon dried rosemary
1/4 teaspoon chilli powder or cayenne pepper (or more)
salt to taste

Slice and quarter the chorizo and fry in a pot or pan, with no added oil, for about 5 -7 min. To make the dish healthier, drain all of the oil that comes out of the chorizo, and add the olive oil to the pan. Add the chopped onions and garlic and fry for another 5 min. Add the tomatoes, the rosemary and chilli powder and simmer for about 10 min, then add the potato chunks and simmer until the potatoes are cooked (about another 10 min.). Add drained and rinsed chickpeas just for enough time to warm them through (1-2 min). Taste and add salt.
This makes for about 4-6 servings, and it tastes delicious the following day or two, or you could freeze the extra for the next time you are starving and too tired to cook.

 

Манџа со наут и чоризо
100 гр. чоризо (или сланина или друг вид кобасица)
2 лажици маслиново масло
1-2 кромид, исечен на коцки
2-3 лукчиња, исецкани
2 конзерви домати (или 5-6 исечени свежи домати)
1 конзерва наут (кој има време да вари сув наут, нека повели)
3-4 големи компири, исечени на поголеми парчиња
1/2 лажиче сув рузмарин
1/4 лажиче чили
сол
Исечете го чоризото или кобасицата на четвртинки и пржете го околу 5-7 мин. Истурете го маслото кое ќе излезе од чоризото, и додајте го маслиновото масло и кромидот. Пржете го кромидот, заедно со чоризото околу 5 минути. Додајте ги доматите, зачините и оставете ја манџата да се динста околу 10 мин. Додајте ги компирите и оставете ги да се сварат уште 10 мин. Додадете го наутот на крај, колку да се стопли (1-2 мин). Пробајте ја манџата и додајте сол.
Ако сакате љути манџи, додајте повеќе чили. Манџава е супер и без компири, со убав леб или врз обичен варен ориз.
