Plum cake | Sitno seckano

this must be the simplest cake with fruit, or maybe i say that about most of the cakes that i make often. but this cake is really very quickly made. most work goes to washing and seeding the plums, and that’s easy. and the cake is so soft and airy.

115 g butter, softened*
¾ cup sugar
2 eggs
1 cup flour
1 teaspoon baking powder
10 – 15 plums
1 teaspoon ground cinnamon
1 tablespoon sugar

(i use a 280 ml cup)

cream the butter and sugar, add eggs and mix. then add flour and baking powder, quickly mix until evenly combined and pour the batter in a buttered pan. i use a round pie pan, 22 cm in diameter. wash, half and seed the plums and arrange over the batter, cut side down, but nestled cut side up also works. sprinkle with cinnamon and sugar and bake in a preheated oven at 175°C, around 35-45 minutes (check for doneness with a wooden toothpick).

the cake is delicious served just cooled a little, but also the next days, if it lasts that long.

* i have made it with sunflower oil, too, and it is equally moist and tasty.
