се мислев дали да го напишам рецептов сега, или да го чувам за догодина. јас и мајка ми кечапот го направивме во првата половина од септември, ама некако други рецепти имаа предност, и овој остана. можеби уште не е касно да направите кечап, а ако не, догодина, кога ќе има убави зрели патлиџани. ние го сакаме кечапот ваков едноставен, па затоа не додаваме зачини и тревки.

за околу 3 l кечап, ви треба:

8 kg патлиџани

2 – 4 лажички шеќер

1 – 2 лажички сол

измијте ги патлиџаните и исечете ги на парчиња. исцедете го сокот со цедалка за патлиџани. ако има потреба, некои делови поминете ги два пати.

сокот од патлиџаните ставете го во големо тенџере (или 2) со 1½ – 2 лажички шеќер. загрејте го, да зоврие и оставете го полека да врие, на јако, 1 – 1½ часа (во зависност од патлиџаните), со повремено мешање, додека не се згусне. по 40тина минути, пробајте го. ако е многу кисел, ставете уште 1 – 2 лажички шеќер.

при крај ставете ½ лажичка сол. а кога ќе биде готово, пак пробајте го и додајте по вкус уште ½ – 1 лажиче сол.

додека кечапот врие и се згуснува, измијте ги теглите и шишињата и нивните капаци. ние користиме помали теглички (околу 300 ml) и шишиња (околу 250 ml), затоа што се позгодни за употреба. наредете ги теглите и шишињата (без капаците) во рерна и загрејте ја на 150°C, а по половина час намалете ја температурата на 130°C. оставете ги повторно половина час, а кога кечапот ќе се згусне, тргнете го од ринглата и извадете 2 – 3 тегли од рерната. внимателно, жешки се. другите оставете ги внатре, може да ја намалите рерната на 100°C и како ќе ги полните, вадете нови 2 – 3.

полнете ги теглите и шишињата со кечап до горе и затварајте ги со нивните капаци, па редете ги во завиткани ќебиња. ние овде користиме 3 тенки ќебиња. за да ги заштитите ќебињата да не се исфлекаат, ставете крпа или весник под теглите и прво завиткајте ги во нив. кога ќе ги наполните сите тегли, затворете ги ќебињата околу нив убаво и оставете ги најмалку 24 часа или додека не се оладат целосно.

потоа чувајте го кечапот на темно, а отворените тегли во фрижидер.

i was thinking that maybe i’t too late for this recipe. my mother and i made this ketchup in the first half of september, but there were other recipes to write, and this one got left behind. maybe it’s not too late for you to make a batch of ketchup. if not now, then next year, when the ripe tomatoes will be at their peak.

we like out ketchup plain and simple, so we don’t add any spices or herbs.

for about 3 l ketchup, you’ll need:

8 kg tomatoes

2 – 4 teaspoons sugar

1 – 2 teaspoons salt

wash and chop the tomatoes. juice them with a tomato juicer to separate the seeds and peels. if needed, run some of the pulp again.

put the tomato juice in a big pot (or two) with 1½ – 2 teaspoons sugar. bring to boil and leave it boiling on high heat for 1 – 1½  hours (it depends on the tomatoes), stirring occasionally, until it thickens. after around 40 minutes, taste it. if it’s very sour, add 1 – 2 teaspoons sugar.

near the end of the cooking add ½ teaspoon salt. taste it again when it’s finished and add ½ – 1 teaspoon salt, according to taste.

while the ketchup is boiling and thickening, wash the bottles and jars and their lids. we prefer smaller jars (around 300 ml) and bottles (around 250 ml), because they are easier to use. put the jars and bottles (without the lids) in the oven and heat it to 150°C. after half an hour reduce the temperature to 130°C and leave them for another half an hour. when the ketchup is ready, remove it from the stove and take 2 – 3 jars/bottles from the oven. be carefull, they are very hot. leave the rest of the jars and bottles in the oven at 100°C and when you fill the first ones, take out 2 – 3 at a time.

fill the jars and bottles to the top and put on their lids. put the filled jars/bottles in prepared blankets. here we use 3 thin blankets. you can put a kitchen towel or newspapers to protect the blankets from staining. when all the bottles and jars are filled, wrap and close the blankets around them and leave them at least 24 hours or until the ketchup is fully cooled.

keep the ketchup in a dark, cool place, and when you open a jar, keep it in the fridge.

    a patlidžani, da. zavisi kade živeesh. vo skopje: tomatoes = patlidžani, a aubergines = modri patlidžani.
